Creamy Lentil Hummus

Loving the fiber in lentils but wishing it wasn't a side... Try this dip!

Ingredients
  

  • 1 cup lentils
  • 2 cups water
  • ½ juice of a lemon 2tbsp if using store bought
  • 2 cloves garlic
  • 1 tbsp curry bio can substitute in curry paste, 1/2 tsp cumin, or chili depending on your taste
  • ½ tsp salt
  • 2 tbsp olive oil

Garnish

  • parsley
  • paprika

Instructions
 

  • Rinse and drain lentils.
  • Add to a room temperature saucepan and bring to a boil
  • Cook over medium, for 15 minutes while stirring until tender. If they're too dry, add more water
  • Drain lentils and rinse with cold water
  • Add lentils and rest of ingredients into a blender and blend until smooth.
  • Garnish with EVOO, Paprika, and parsley. Serve with naan.
