Creamy Lentil Hummus
Loving the fiber in lentils but wishing it wasn't a side... Try this dip!
Ingredients
- 1 cup lentils
- 2 cups water
- ½ juice of a lemon 2tbsp if using store bought
- 2 cloves garlic
- 1 tbsp curry bio can substitute in curry paste, 1/2 tsp cumin, or chili depending on your taste
- ½ tsp salt
- 2 tbsp olive oil
Garnish
- parsley
- paprika
Instructions
- Rinse and drain lentils.
- Add to a room temperature saucepan and bring to a boil
- Cook over medium, for 15 minutes while stirring until tender. If they're too dry, add more water
- Drain lentils and rinse with cold water
- Add lentils and rest of ingredients into a blender and blend until smooth.
- Garnish with EVOO, Paprika, and parsley. Serve with naan.
