Creamy Lentil Hummus

Loving the fiber in lentils but wishing it wasn't a side... Try this dip!
- 1 cup lentils
- 2 cups water
- ½ juice of a lemon 2tbsp if using store bought
- 2 cloves garlic
- 1 tbsp curry bio can substitute in curry paste, 1/2 tsp cumin, or chili depending on your taste
- ½ tsp salt
- 2 tbsp olive oil
Rinse and drain lentils.
Add to a room temperature saucepan and bring to a boil
Cook over medium, for 15 minutes while stirring until tender. If they're too dry, add more water
Drain lentils and rinse with cold water
Add lentils and rest of ingredients into a blender and blend until smooth.
Garnish with EVOO, Paprika, and parsley. Serve with naan.
